Classic Chocolate Lava Cakes

Ingredients: – 1/2 cup unsalted butter – 4 ounces semi-sweet chocolate, chopped – 2 large egg – 2 large egg yolk – 1/4 cup granulated sugar

– 1 teaspoon vanilla extract – 2 tablespoons all-purpose flour – Pinch of salt – Optional: powdered sugar, whipped cream, or vanilla ice cream for serving

Preheat the Oven: – Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust them with cocoa powder or flour.

Prepare the Chocolate Mixture: – In a heatproof bowl set over a pot of simmering water, melt the butter and chopped chocolate, stirring occasionally until smooth. Remove from heat and let it cool slightly.

Whisk the Eggs and Sugar: – In a separate mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until well combined and slightly pale in color.

Combine the Batter: – Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth. Fold in the flour and salt until just combined.

Fill the Ramekins: – Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.

Bake the Lava Cakes: – Place the ramekins on a baking sheet and transfer them to the preheated oven. Bake for 12-14 minutes, or until the edges are set but the centers still appear slightly soft.

Serve Warm: – Remove the lava cakes from the oven and let them cool in the ramekins for 1-2 minutes. Carefully run a knife around the edges to loosen them, then invert each cake onto a serving plate. The center should still be molten.

Garnish and Serve: – Dust the tops of the lava cakes with powdered sugar, if desired. Serve immediately with a dollop of whipped cream or a scoop of vanilla ice cream.
