Gluten-Free Cookes & Cream Pie

One package gluten-free chocolate sandwich cookies. 5 teaspoons melted butter 1-gallon box of softened but unmelted vanilla ice cream

1 cup thick whipping cream Take 2 teaspoons of sugar. Use 1/2 teaspoon vanilla bean paste (or ordinary vanilla extract)

Process 22 chocolate sandwich cookies until finely ground. Add to pie plate. Pour melted butter over crumbs and mix. Push into pie crust form. Set aside.

Pulse 8 chocolate sandwich cookies in the food processor, leaving some bits. Mix roughly cut chocolate sandwich cookies and vanilla ice cream in a bowl. Fill pie crust, cover, and freeze until solid.

Before serving, mix heavy whipping cream, sugar, and vanilla bean paste on medium high until stiff peaks form.

Add a generous scoop of whipped cream to pie slices. The crust will be firm directly out of the freezer. A clean slice requires a sharp knife and patience. As usual, the first slice will be nasty, but the second should be better. Enjoy!)
