Mini Apple Pies 

For the Pie Crust: – 1 1/4 cups all-purpose flour – 1/2 teaspoon salt – 1/2 cup unsalted butter, cold and cut into small cube – 3-4 tablespoons ice water

For the Apple Filling: – 2 large apples, peeled, cored, and diced – 1/4 cup granulated sugar – 2 tablespoons brown sugar – 1 tablespoon lemon juice

– 1 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – 1 tablespoon all-purpose flour

For Assembly: – 1 egg, beaten (for egg wash) – Granulated sugar (for sprinkling)

Prepare Crust: – Mix flour, salt, and cold butter until crumbly. – Add ice water, shape into a disc, and chill.

Make Filling: – Combine diced apples, sugars, lemon juice, spices, and flour.

Assemble Pies: – Roll out dough, cut circles, press into muffin tin. – Fill with apple mixture, top with lattice or circle crust.

Bake: – Brush with egg wash, sprinkle with sugar. – Bake at 375°F (190°C) for 20-25 minutes until golden.
