Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs, one at a time, until well combined. Stir in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the rolled oats until evenly distributed throughout the dough. If using any mix-ins, fold them in at this point.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden brown around the edges.
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
