Strawberry Banana Pancakes

Ingredients: – 1 cup all-purpose flour – 1 tablespoon granulated sugar – 1 teaspoon baking powder – 1/2 teaspoon baking soda – Additional sliced strawberries and banana for serving (optional) – Maple syrup or honey for serving

– 1/4 teaspoon salt – 1 cup buttermilk – 1 large egg – 2 tablespoons unsalted butter, melted – 1 ripe banana, mashed – 1/2 cup diced strawberrie – 1/2 cup diced strawberries

Prepare the batter:  In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Combine wet ingredients:  In a separate bowl, whisk together the buttermilk, egg, and melted butter. Add the mashed banana and mix until well combined.

Mix wet and dry ingredients:  Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps in the batter are okay. Gently fold in the diced strawberries.

Heat the griddle or skillet:  Place a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

Cook the pancakes:  Pour about 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.

Serve:  Stack the pancakes on a plate and top with additional sliced strawberries and bananas, if desired. Drizzle with maple syrup or honey before serving.
