These 6-Minute Pork Chops Are A Weeknight Lifesaver

Ingredients 1/4 cup packed brown sugar 2 Tbsp. kosher salt 1 tsp. smoked paprika 1/2 tsp. onion powder 1/2 tsp. garlic powder 1/2 tsp. ground mustard

Sprinkle the six ingredients on both sides of pork chops after mixing them in a bowl. Double or divide this recipe to season two pounds of pork. After seasoning the pork chops, you can cook or freeze them.

This move matters. I usually buy 18-pack pork chops at Costco. I combine extra spice, sprinkle it on, put them on a parchment-lined baking sheet, and freeze until firm before putting them in freezer bags.

The night before, I take out how many I need and let them defrost in the fridge. So when I rush home from work, I can set the chops out while I preheat the grill and be ready!

I like grilling pork chops to avoid cleaning pans! My grill is set to medium-high, and I cook 1-inch-thick frozen pork chops for 6 minutes per side until they reach 135°F.

If using the oven, preheat to 425°F, roast pork chops for six minutes, flip, and cook for another six minutes until done.

On the stove, heat 2 tablespoons of oil to coat the bottom of the pan and cook over medium to medium-high heat for 6 minutes per side, flipping regularly to brown.
